Foodie Friday – Cupackes



Everyone loves a cupcake, they are usually the cake of choice for young and old and they are a welcome distraction in our home. The kids just love mixing and watching their hard work to come to life and the decorating, however rubbish I am at it always cheers us up!

Here’s my easy peasy cupcake recipe,

100g caster sugar

100g self raising flour

100g butter or margarine

1 large egg or 1 small egg and a dash of milk.

Bake for approx 20mins at 180

Simply throw it all into a mixing bowl and mix until all ingredients are combined. Add any extras you want i.e.: chic chips, fresh fruit, glacier cherries etc, fold in and divide between cupcake cases.

Bake for approx 20 mins at 180 then decorate as you see fit. We often leave them as is. If you want chocolate ones substitute half of the flour for cocoa powder.

It really is as simple as that! Now go forth and bake ALL OF THE CAKES!
